spicy & tasty absolute must-haves?

In follow-up to a query I recently posted about exploring Chinese restaurants in Queens, I now think I will start my exploration with S & T, which I'd already heard great things about. I will be myself so can only (reasonably) order a few items and I do want to have some of the dishes be offal (intestine and stomach). Actually, my own inclination would be to order only offal based dishes but are there other things there I should absolutely have? I don't want to miss out on something really great even if it doesn't fit my obsession for offal.

    I really like their cold appetizer with kidneys. Great mala and seasoning and sooo good with some cold beer!

      The celery with dofu gan is really essential. As is the garlic seaweed, the spicy tendon, the spicy cold tripe, the kidney with red pepper, the lamb with cumin, any of the "water-cooked" dishes, the fish with dofu, the 3 glass chicken (even though it's not Sichuan, but Taiwanese). My favorite veg. is the vinegar soaked white cabbage. Yum, I'm hungry.

        get the tofu and celery cold app, along with whatever else you order. This is the only sichuan place i've been to that does this dish really really well. (most don't do it at all.) don't worry about eating all or even most of it. take it home and you'll find yourself irresistibly drawn to your fridge tomorrow, sneaking bites all day.

          2ND the tofu and celery. I dont liek tofu and i love this dish. Also, most of the cold table @ front is great as apps or to sides or to take home as I often do.
