Pairing for 2004 Duckhorn Estate Cab?

I was given this bottle recently and would like pairing advice from someone who has actually tasted it and is carnivorous.

    I'm going to assume that this is the Estate and not one of the Estate grown single vineyards. That said, it is probably too young to show well. If you do open it, you should double decant it at least two or three hours before you start drinking it.

    The wine should present lots of flavors of cassis and black raspberry with notes of herbs and coffee and licorice. The tannins are still fairly aggressive but have integrated well. You can definitely taste the substantial Cab Franc that is used to blend this wine in the pepper notes on the back of the palate. This is a perfect wine with a grilled steak or with game. It would also go well with rich stews and dishes with mushroom or red wine sauces. It would probably overpower must poultry unless you had a duck or goose with a rich sauce. It would also go well with a lamb roast or shanks. You might also try it with an osso buco. But my favorite pairing is always a rare sirloin or ribeye that is properly charred on a hot grill.
