Mint chocolate dessert recipe needed

My hubby loves mint chocolate chip ice cream, so I'd like to find a chocolate mint dessert recipe. I don't have any in my recipe binder.

Any type of dessert is fine and there are no food allergies/restrictions.

We make a fudge mint cake at work. We make a chocolate cake and layer it with mint flavored buttercream and ganache and enrobe it in more ganache. It would probably work with recipes you already have.

This is an old recipe from a lady I worked with years ago. I've never made them, but I loved to eat hers when she brought them to work. I am copying the recipe the way she wrote it. Of course, you must make these at night!

Go To Bed Mint Cookies

2 egg whites
1/2 tsp. cream of tartar
3/4 cup sugar
Pinch of salt
Drop of green food coloring
6 oz. semi-sweet mint morsels (she used mini-morsels)

Preheat oven to 375'
Beat egg whites and cream of tartar, gradually adding sugar, salt and food coloring.
When stiff peaks are formed, stir in morsels.
Drop by the teaspoonful of mixture onto ungreased cookie sheet.
Turn off oven & put cookie sheet in.
Go To Bed Mint Cookies will be done on awaking.
Makes 50 or less depending on size you want. Can be wrapped and frozen.

This isn't really a dessert but Gourmet ran a recipe for "Peppermint Patties" I love them but I thought really? How much better can homemade be? OMG I made them for Christmas 3 years ago now if I do not make them for every holiday I face an angry mob? I do not temper the chocolate because to be frank I barely get them done when they disappear. So I don't bother.

Homemade peppermint patties are the best, and you can use different cookie-cutter shapes, too (e.g., hearts for your sweetie). It's worth seeking out peppermint oil to use instead of extract, as the oil is what gives them that characteristic "cool" flavor.
