Leftover espresso and rum mixture

I made tiramisu and had a lot of leftover espresso and rum mixture from dipping the ladyfingers. It's a high quality espresso and a really nice rum...I feel dumping 2-3 cups down the drain would be a waste (yeah, I had a lot leftover). I don't really enjoy coffee that much, so drinking it is not an optimal option. I took it and froze it. What's a girl to do?

    i always add esperesso powder, and frequently rum or bourbon to anything i bake that is chocolate. you could use your mixture like that. it adds a nice depth of flavor without standing out above the cake or brownie. beware your liquid proportions. did you freeze it as a batch? if so, thaw and refreeze as ice cubes, which would give you about 1 or 2 Tablespoons of goodness. it's also not something that goes off -- it doesn't need to be frozen.

    you can also use it in bread puddings or custards.

      Espresso and Rum zeppole would make for killer breakfasts!

        Most bacon jam recipes call for a cup of coffee, and I can't imagine the rum flavor hurting anything at all.... (plenty of on-line recipes)

          if it'll scratch up with a fork, it would be a nice granita, assuming it freezes correctly.
