Does it have to be a tripe cart? Nerbone in the Mercato Centrale does a good lampredotto panino.

There used to be a tripe cart parked right outside that market.

Have a look at Rosespot's trip report at the end of this thread:

She mentions a tripe cart that wasn't open, a tripe stand in the Mercato Sant'Ambrogio that was and a restaurant that calls itself a tripperia.

My favorite tripe carts are:
Orazio Nencioni
Loggia del Porcellino, Florence
Lupen e Margo
Via dell Ariento, Florence (just outside the Mercato Centrale): excellent sauces!
L’Antico Trippai
Piazza Cimatori
These are all great and centrally located, traditional trip carts.

I ate at both Lupen e Margo and L'Antico Trippaio recently. Both were great for tripe and lampredotto. If you like spicy sauce, definitely try Lupen e Margo.
