Mother of all ribeyes!
In my froth over Everest, I neglected to praise the dinner we had at David Burke Primehouse last Sunday. Well-chosen wine list, knowledeable sommelier and waiter, and oh, the 75-day dry-aged ribeye! This was a spectacular piece of beef, though not for the faint of heart. Served simply, with a side order of mushrooms and onions. Afterward the sweet sous-chef, Brianna, took us to the dry-aging room on site. Besides a fabulous meal we got some steak education to boot. Bravo, would return in a heartbeat if I lived in the wonderful city of Chicago.
