Need advice for carrot soup, please
I have carrots I need to use and think my elderly father would like soup. Would appreciate someone's advice on a fairly quick recipe.
I have on hand;
ten carrots
pint of chicken broth
one cup of cream
butter
green pepper
onion
two small potatoes which I need to use
celery
bacon
cheese
fresh rosemary
dried herbs and spices
I am thinking to just slice and boil carrots in broth ; add sauteed vegetables; add butter and cream and call it a day, but would be so grateful for your suggestions.

I'd say use the celery and onion, skip the green pepper.
If you want a bit of a twist, add cumin or curry powder or ginger.
A shot of something hot to warm it up helps- chili flakes, cayenne. And if you do go this route, believe it or not, a little bit of peanut butter turns it into something a little exotic. -
I like carrot soup, hot and cold, but I like it to taste like carrots. I would leave out the butter, green pepper, bacon, and cheese. I would add salt and white pepper and maybe a little onion and some celery, a mirepoix base. The carrot slices in broth will reduce quickly; keep a close eye. Maybe serve with croutons, cilantro if you have it.
