Dark chocolate chips/ coating chocolate

Jumbles Aug 29, 2011 09:54 PM

I was wondering if there were any restaurant supply stores in the Los Angeles area or other types of stores that sell dark chocolate chips or coating chocolate. I need about 4 pounds. Any suggestions?

trader joe's sells semi-sweet chocolate chips.

imho, they need to be used within a week or so of purchase to taste "right."

Surfas definitely sells couverture and pound bags of dark chocolate chips (Guittard, my fave). Also, big bags of dark mini chips.

Do not think Surfas carries Guittard, check first.

Nicole's Gourmet Foods in South Pasadena. They sell the good stuff...once I fix my oven...it's on!

Both Nicole's and Surfas sell Valrhona in commercial quantities. I haven't noticed whether either carries "Les Perles" (chocolate pearls), Valrhona's version of chocolate chips:

Trader Joe's sells blocks of dark chocolate which I've nuked to coat both fresh and dried fruit. If you actually need dark chocolate chips, Whole Foods carries the Ghirardelli dark chocolate chips. Ralphs does sometimes, but WF carries them all the time.

Sur La Table carries some couverture chocolate - not a huge selection, and the exact brands and types seem to vary a bit from store to store, so you might want to check with your nearby locations to see what they have.
