Challenge: Recipes for a Broken Refrigerator

My refrigerator is broken for the third time in two months. It's only two years old and still under warranty so we keep trying to get it fixed. We're facing another week waiting for parts and using the mini fridge my husband usually keeps at work. This makes cooking a bit of a challenge, and I'd love to hear how some of you would deal with it.

What would you make for a family of four that uses few-to-no refrigerated ingredients, takes an hour or less attended time to make, and might leave almost no leftovers (or can be stuffed in a plastic bag in the mini fridge)? We're not picky eaters and are fine with going meatless.

Any suggestions are much appreciated!

  1. Pasta tossed with a jar of artichoke/roasted red pepper spread (both TJ's and WF has this) ... add parmesan and/or a dash of cream (but not nec.) This also works for the prepared fresh pestos you can buy.

    You could also toss the hot pasta with a bag of the pre-washed spinach (if you could pick up on the way home, for ex.) and cubes of feta. Serve with a tomato salad (or not).

    You could buy pizza dough (or use tortillas/pita etc) and top with the artichoke mixture, tapenade, pesto, or just get a small jar of pizza sauce. Add cheese ... bake.

    Just a few ideas off the top of my head ... good luck with your fridge!
