Hi all. Once again I am getting SO bored by my lunches. I like to make a big batch of something at the beginning of the week... healthy preferably. I make lots of quinoa salads, veg stir fries, etc..... running out of ideas! Please help :)
roast a chicken --> fajitas, salad, etc.
stuffed zucchini/potato skins - i don't use butter but will dry saute onions, garlic, veggies, TVP, etc
mezze - hummus, pita, baba ghanoush, kebabs
...not sure if by your usuals you are a vegetarian... i'll stop until you confirm or not...
