Buy Foie Gras?

I want to buy a few oz's of foie gras and sear 'em up! I haven't seen anything at Central Market - anyone know where to buy?

I've definitely seen it at CM--may be a holiday item. Have you asked them? They should be able to order for you.

I do know it when I see it ;) The way I've seen it there is double lobes (the whole liver), vacuum-packed (so more than a few ounces). Haven't asked if they would sell in a smaller quantity. But I know the shelled crab that's pre-packed in containers, they will sell in any quantity you want.

I'm new to this area, but in Colorado and Florida one had to buy the whole liver. And that is not a bad thing.

During one of the Farmers Market cooking classes years ago Chef Gilbert Garza of Suze used a few ounces in a recipe and offered to sell a small quantity if contacted at Suze. I bought about 3 ounces and it was perfect for the recipe. I don't know if he's still willing to do this but foie gras is still on his menu so I'd suggest giving him a call.

We also resorted to online and had it shipped...from Sonoma Artisan. I would recommend making a larger order of other items or S&H make this a VERY special night only.
