Blackberries revert to red after freezing?!

Hi,
Well, the blackberries are finally ripe. Took long enough, didn't it? Last year, my husband swore that some of his perfectly ripe berries must have turned red in the freezer, rather than my suggestion that he'd picked less-than-ripe berries.

Well, yesterday he picked a gallon of berries, and spread them on trays for freezing. He showed them to me, to verify they were all black, with no red berries in the bunch. But sure enough this morning, after the night in the freezer, virtually every berry is some shade of red, from very deep to almost bright red.

Has anyone else had this happen to your berries in the freezer?

  1. Yes-it just means that some are riper than others as per SOP.

    What does it matter if you're making pies or jam?

    Or liqueur-I used to make a killer Blackberry liqueur w/Gin.

      I guess it doesn't "matter", but it bothers my husband. He goes out and collects the ripest (without being mushy) berries that he can, and it drives him nuts to see them looking under-ripe after freezing, when they were perfectly black before we froze them.

      Blackberry liqueur sounds divine, but I'm not a huge fan of gin. I'll have to look into that one! LOL!
