What to serve with Boudin Noir and Boudin Blanc?

So I had some credits for Gilt Taste and decided on ordering this assortment of sausage:

4 Boudin Blanc
4 Boudin Blanc With Truffles
4 Boudin Noir

now I have 12 sausages that I'd like to use for a little gathering of friends

there will likely be 5-7 of us total, sitting around, drinking wine and eating sausage

the question is: What else?

I'd like to serve something else along with it. I know I've had potatoes and apples served with my boudin noir, but I wondered if there was anything else I could do that would match the others.

Any suggestions of sides/accompaniments/additions that will make this little tasting more interesting?

  1. Don't limit yourself by focusing too heavily on French recipes for using your sausage. There are many good German, Bavarian, even Italian sausage recipes that will serve you well. Cooked in beer or a marinara sauce, sausages are quite versatile as a main dish ingredient.
    You could consider using sides like mashed or scalloped potatoes, roasted vegetables, a tomato/cucumber salad with feta cheese. Served with butter fried noodles (fried cubed bread pieces combined in the noodles, a medley of sauteed mushrooms/onions/garlic/bell peppers, or as the protein element in a nice fondu.

        we did a pommes puree and sauteed leeks and apples with some nice mustard.
