Dishes that feature Salmon Skin?

Hello Seattle Chowhounders,

I will be visiting for a week in September, staying at Inn at the Market.

I love salmon and salmon skin, the "bacon of the sea". My favorite sushi chef here in Austin, Texas will make me a "salmon skin salad" that I completely enjoy.

I've read the posts here re: best salmon in Seattle, but have not seen many references to salmon skin.

Can you recall having any delicious dishes that feature salmon skin?

They have a salmon skin salad and a salmon skin roll at Umi Sake House in the Belltown neighborhood:)

My wife and I frequent a funky good Japanese place in Wallingford called Kozue, right next door to the big rusty Thai place and four doors from Molly Moon's. Salmon skin spinach is on the menu as well as salmon skin rolls. At happy hour the salmon skin is under five dollars. another favorite is pressed anago sushi, which I haven't seen elsewhere. This is no cookie cutter place and surprises appear regularly along with a pretty good sake selection.

If you find some, let me know. The only thing I can think of is salmon skin sushi. But that's pretty common.
