No knead , no fuss, bread

I've been using the following procrdure for some time with great sucess.
3 cups flour (I use multigrain) 1/4 tsp instant yeast, 11/3 cups lukewarm water
Sift yeast into the water. Measure out flour into large bowl. Mix thoroughly with water/yeast. Cover bowl and put to side for 12 to 24 hrs. (The time does not seem to be critical.)
After the 12+ hrs gently use a scraper to transfer the dough into the cooking pot . Cver the pot and let sit for 2hrs.
Preheat the oven to 500F.Put the pot , lid on, in oven. Cook at 475F for 1/2 hr then remove lid, reduce temp to 450F and cook for further 15min.
Cool and enjoy
To prevent the bottom burning I put a baking tray on the bottom rack and the potson the next.(I cook 3 breads at a time)
I also cook the bread in my convection toaster oven but use a plate as a lid.
