savoury zucchini / courgette / summer squash recipes that freeze well, that would only require reheating later?
Besides cooked zucchini soup and savoury zucchini muffins/loaf/etc., which savoury zucchini recipes have you found to freeze well, and reheat well?
Does anyone have a zucchini parmigiana recipe that reheats well?
I was thinking of a tian too. Martha Rose Shulman had a little segment on Splendid Table a couple weeks ago that had a basic way to make tians out of any vegetable. And a recipe for zucchini tian. I've been thinking of doing that as a way to use all these summer vegies in a way that would make good lunches to reheat. And I think they would freeze well.
