French cooking classes

I am hoping to visit France in the spring and would like to take a cooking class in France while I am there. I would prefer the class to be taught in English (I do know some French but probably not well enough to follow along). I would prefer a cooking class over a pastry class, but am willing to consider those as well.

Is it better to take a class in Paris, Provence, or somewhere else in the country? I plan on being in Paris for sure and will also be visiting some friends living near Montpellier and Perpignan. Other than that, I haven't decided on any additional locations as of yet.

Also, does anyone have any other recommendations other than the ones that I have found in old threads:

    There was a great recent thread on apartments to rent in Paris with good cooking facilities & also good cooking class options....but the thread has disappeared. No doubt deleted by the mods for some reason. Some of the recommendations are in the threads above as well. I'll see if I can find the other places recommended & post those again.
