Road Trip from Texas to California...What/Where to Eat

I will be traveling to the Sacramento area in a few days. By way of 287 thru Amarillo on to I-40 all the way to Barstow area of California, before I turn onto I-15 to CA-58 to CA-99 onto Sacramento.
What are some of your favorite places you can recommend on this journey.
I look forward to your replies and hope to try some new foods and places I haven't yet.

      Might want to consider leaving I-40 and drive up through the Mojave Desert to link up with I-15 at Baker and take in the improbably located "Mad Greek" cafe in Baker on 1-15 and then continue on to Barstow on 1-15, or make a loop through the Mojave Desert (wild scenery) and back to continue on 1-40 if you want to stay true to the 1-40 route.

      In the middle of the Mojave Desert area on this route is the former railroad town of Kelso which now houses a Parks Service historic restoration visitor center which included re-opening light food service at the former "Beanery": http://digital-desert.com/kelso-depot/ This is definitely worth a detour.
