Canning--too much head space?

I canned some peach jam yesterday and the last jar had about 3/4 to 1-inch headspace (the jam didn't quite stretch far enough). I have a good seal on that jar, though. Is this safely storable or am I resigned to putting it in the fridge. I'm not planning to reprocess just this one jar.

    just put that one in the fridge and eat it first.

      Crap--I was afraid of that. I don't actually EAT much jam (reducing my carb intake and when I eat them, I prefer other forms like ice cream). I usually give my dad a whole bunch of jam (he does eat it regularly) but I probably won't see him until he visits at Thanksgiving. Might just pitch it. Bummer.

        Nah, give it to him at Thanksgiving -- it'll keep that long.

      Don't throw it out - you are just talking a 1/4 inch error, for goodness sake! It will be okay. Headspace is all about insuring you get a great seal.....if your jar is sealed, it will be all right. http://www.uga.edu/nchfp/questions/FA... Don't worry about getting botulism - you can't get botulism from canned fruit....it is too acidic. Happy canning!
