ISO Vegan and Diabetic Cake Frosting
I've been searching for a vegan and diabetic frosting for a cake I am making. I can find vegan recipes and diabetic recipes, but none that combine the two. I'm interested in a frosting that has cocoa powder in it. I made a frosting that had tofutti and stevia in it. It was okay, but not great. Does anyone have a recipe they can share or advice about a sugar substitution? Thanks!
You can make a vegan ganache using dark chocolate and coconut milk. The only sugar will come from the chocolate, which will vary depending which chocolate you choose. I would do a 1:1 ratio, let it set up, then whip it. You could try unsweetened chocolate and add stevia, though I have no idea how much stevia you would add.
