BBQ Sausage

I recently visitied the Salt Lick BBQ in Texas, food was great but I was really blown away by the "Hill Country Sausage" Does anyone know if there as a product like that for sale anywhere in Toronto

        Here is a recipe you could take to an amateur sausage maker, or maybe the small sausage store at 1004 Dundas St.W.near Ossington .

            I'm not sure if it was all pork or a pork/beef mix (I sent them an Email to ask but no response yet) Kinda like a hot smoked, finer ground really loose packed kilbasa. I usually avoid BBQ joints in Texas as the meat usually tastes like charcoal briquettes and Garlic Powder but this place was different, great quality. I've been here several times and everything is decent but it's the first time I tried the sausages, they were amazing, love to get the raw version and smoke them myself.
