Bouchon - which meal?

We are going to be in Vegas in October and we want to try Bouchon. I have heard/read a lot about their breakfast....is this the best meal to "spend" there? Thanks in advance for your suggestions!

I have had 3 very good dinners there.
I have also eaten breakfast there a couple times, very reasonable and excellent.
But I would choose to do dinner myself.

breakfast-

- pommes frites are absolutely amazing (had them with the croque madame. actually better than the croque)
- waffles are almost always a good (and cheap) bet
- they have some of the best coffee I've ever had, consistently. And they give you a free cup to go.
- i actually do not like their pastries, although the coffee cake I had at Bouchon NYC was excellent

I think that their shellfish is the star attraction. I don't know if their oysters are available at breakfast, or if I'd even be up to eating the early in the a.m.
