I have a bottle of Lee Kum Kee chili-garlic paste with a very large OU on the front, but I'd heard in another thread here recently that the OU will no longer be certifying their stuff. You might still be able to find it in stores, but probably not for much longer.

Do you mean the pilpel tzuma? How similar is that to Asian chili-garlic sauce?

chili garlic sauce and chili garlic paste are different, its very similar to chili garlic paste, but different from chil garlic sauce

chli garlic sauce, in my experience, had a little bit of a vinegar back and is obv a different consistency

paste is just garlic and chilis turned in to a paste, with some oil

Huy Fong Foods, Inc. (rooster on label) makes Vietnamese "Chili Garlic Sauce." My jar (8 oz. ) is several years old and going strong. I probably found it at an Oriental or international grocery store here in St. Louis. The hecksher is a shield with a Magen David & a K in the middle. Potent!

See this old thread http://chowhound.chow.com/topics/740431 for chili garlic sauce. Not sure about paste, but I will check.

Thanks, but I didn't see the chii garlic paste on it (unless it's called something else).

The discussion is about Sri Racha which is a kind of chili garlic sauce, not paste. It think the difference is the sauce undergoes some type of pickling process with the addition of vinegar, but I'm not sure. If you are looking for paste, Lee Kum Kee used to make it with a hechsher but I can't find it now difficult with its recent change in OU kashrut status. I remember seeing kosher garlic chili paste (sambal oelek) in Australia, but I don't remember the brand -- Merel's perhaps?
California Delight makes a hot chili sauce that you might be able to use depending what you need it for.
There is also a recipe for garlic chili paste in the NY Times http://www.nytimes.com/2007/04/25/din...
PS. I always wear gloves when working with chilies.
