Fave recipe for small amount of lamb kidneys?

So last night I spotted some small kidneys at the butcher's shop---unmarked and unfamiliar. Turns out they were lamb kidneys. I asked how much they cost, really just out of curiosity, and the butcher gave 'em up for free.

There's not much there, maybe a quarter pound. Any recommendations for dinner tonight? I've never cooked them, and have actually only done calf kidneys once or twice. Girlfriend is looking a little unsure about the whole thing. I was thinking about maybe just sautéing them up in some bacon fat or lard with a little fresh sage and garlic, sloshing in a little sherry, and reducing. Maybe sliced over some lightly dressed, peppery greens with a little thinly sliced red onion? Seems like a nice little first course, but I'm open to any and all suggestions from the more experienced.     Slice once to open them up in halves, rinse in water for a while, pat dry, saute in bacon fat (you've been reading that thread too, eh?), add some dijon mustard and your herbs, finish with cream. Delish!
