Recipes for unripe peaches

This isn't directly related to this old, original question and may be a question better suited for the home cooking board, but is there anything i can do with some peaches that i have that aren't very soft or ripe...is there any kind of simple dessert i can do with these hard peaches? Thanks!

      Depending how unripe they are, you might consider the "stone fruit slaw" that Bon Appetit described in its latest issue. It's basically a cole slaw with julienned stone fruits. It calls for under-ripe peaches, etc., so this might be a good option to consider.

        Are these peaches completely unripe (as in hard as a rock), or just not ripe enough for eating out of hand? If they are sliceable, you can peel them, cut them up and make anything from a peach crisp or cobbler to a peach pie. In fact, when making pie, I prefer peaches to be still a bit harder than I'd like for eating.

          Over the years, I've seen unripe peaches get pickled. They were pretty small (the size of an apricot, roughly). It was an Italian thing. That might be an option.
