Can these pickles be saved?

I made a batch of Alton Brown's refrigerator pickled beets. My husband and I just tasted them and they are sooo vinegary that we don't want to eat them! I'm pretty sure I followed the recipie closely, but cooking with the 9 year old does make things interesting. It's only been a few days, will they get better? If not, can I dump the brine and try again with the same beets or just give up and start anew?

Just add some water to the brine. I think it will be okay. Did you use the white wine tarragon vinegar it calls for? White wine vinegar is fairly mild....so I would be surprised if they are too vinegary.

Actually I used regular white vinegar, I was out of white wine vinegar- maybe that's the problem? I'll try the water thing, thanks

That's probably it - try adding some water and see how it tastes.
