St. Louis to Tucson, via US 44
I'll be driving my daughter to Tucson in a few weeks to drop her off at the U. of Arizona. We'll be taking the southern route, across Missouri and Oklahoma, with our overnight stop in Amarillo. For day one, we'll be looking for lunch somewhere near Joplin or the Oklahoma border, near US 44. Anything interesting to recommend?

If she can wait until she reaches Tulsa el Rio Verde is a superb "Hole in the Wall" Mexican restaurant just off of 244 (44 and 244 split just East of Tulsa and you can easily get back to 44). Cheap with an extensive menu. I've reviewed the restaurant in this site. It's a block east of Utica and a couple of blocks North at 338 N Trenton. It sits all by itself surrounded by its parking lot and is open 7 days a week.
