I have about 3 TBPS of leftover orange rind from my attempt at duck a la orange. Can I freeze it? And ultimately, what can I do with it?

Thanks.

yes you can freeze it. What can you do with it? Add it to almost anything to add orange flavor. Pound cake, ice tea, simple syrup, salad, on top of the whipped cream on strawberry shortcake, glazed carrots.......

I freeze lemon, orange, lime & grapefruit zest and rind all the time. You can just pop it in a ziplock if you plan to use it in short order or, sometimes I pour olive oil in the bag to cover and preserve it longer. The oil is infused w the flavour and can be used for the savoury preparations rasputina suggests in addition to stir-fries, marinades, stews, roasts etc. Orange is often called for in Mediterranean and Middle Eastern dishes and of course, Asian dishes.
