Good places for the single diner...

I'm new to Denver and looking for places that seem particularly welcoming to the lone diner. I like to eat out, and I really would like some ideas beyond the diners and chain restaurants that I haunt when I'm at loose ends. I don't like sushi, but beyond that... I'm ok with pretty much anything from cheap to mid-range in price. I'll go anywhere, but some places are more comfortable for an individual diner than others.
