Who makes osso buco with lamb?
Osso buco type recipe for lamb shanks in "A Platter of Figs", David Tanis. I understand from a butcher that this is quite popular. The shank is cut in 3 pieces.
I've seen it with lamb, but that's why I wrote type, to signify the style. Anyway, how about grilled lamb chops?
