Quebec City Bistro advice needed

Will be in Quebec City during Labor Weekend and hence want to book something up fairly soon for a nice dinner at a good quality bistro. The following places seem to be well regarded. any advice on which to go for/any to avoid would be much appreciated.

Bistro du Cap
Hobbit Bistro
Le Lapin Saute
Bistro Sous Le Fort
Le Pain Beni

    Le Moine Echanson. I know I should like a broken record to most Quebec 'Hounders, but dammit, that place was excellent.

      And for broken record number two, my favourite is L'Echaude. If you're looking for quality bistro fare, that would be my pick (and indeed it is every time I visit...)
