Vegan Cheese

Looks like the SuperTaster tried a vegan cheese this past week, which is certified pareve by the CRC.

    Daiya is also known to be pretty good for a vegan, pareve cheese. I am not a cheese lover, so my opinion is far from the most trustworthy, but it did melt, and had a reasonably cheese-like taste. Non-vegan cheese-lovers would not choose it over real cheese, but for eating/cooking with meat for kosher-keepers, I think it's an excellent choice, and I know many agree. There are a variety of types; I know I've seen mozzarella, cheddar, and a third type (maybe Jack?).

      I tried the Daiya and it's "okay" but it has a refrigerated life of about 30 seconds once opened. Both packages (and maybe it was a bad couple of batches) were unusable a few days after I opened them.

        Mine lasted about three weeks until I threw out the rest. One day, I made a chicken parmesan which tasted a bit off, even though the Daiya smelled OK in the zip-loc bag I had put it in when I opened it a few weeks before. However, the next day, I went to use another piece of the chicken, and I realized it was the chicken that was off, and possibly not the Daiya. No real way to know 'til I buy another bag.

          The Daiya package states a short shelf life after opening.
