Favorite Cooking Light recipe

Hey Chowhounders,

Although I would love to cook with butter and duck fat every night, I absolutely adore Cooking Light recipes for my week night dinners. The recipes help me keep my weight down, and rarely lack flaws in my opinion, except for an occasional lack of oil. Anyway, I would absolutely love to hear what everyone's favorite tried and true Cooking Light recipes are. Mine, is "Winter Squash Risotto with Radicchio". Looking forward to hearing all the opinions!

    I love Cooking Light for everyday recipes!

      I love these! Funny enough, I made the falafel with avocado from CL's best-ever recipes last night. It was the best. I love all of these recipes though. I have been wanting to make the spicy honey glazed thighs, but I am not a huge fan of thighs. Seeing that you have done this with breasts though, is really exciting. Thanks!

      Another idea...if you are interested in cooking/eating more CL food, they have food clubs all over the country. I was in one a few years ago and it was informative and fun.

        I halved the amount of poblanos and found the heat level to be perfect. Do skip the breadcrumbs if you don't want a "meatloafy" texture. I even subbed ground chicken breast for the beef with good results (and lower fat).

          I feel like I've posted about them on CH ad nauseum, but that's because they are good and fun to make. Be sure to up the number of herbs and spices in the filling (I add fresh sage, rosemary, garlic, ginger, sauteed shallot, and hot pepper flake). So good.

                All of those sound amazing! "Black Bean Burgers with Mango Salsa", are fantastic. I don't even have the bun or salsa, but just the burger itself on a salad. I also use Monterrey Jack cheese. SO GOOD!

                    I have been making these Chicken Burgers with Peanut Sauce for years. My husband loves them. I hate turkey burgers, but I like chicken burgers....I don't even need the peanut sauce, so my husband eats it all!

                        I stopped subscribing because I felt that after years of it, there was a lot of redundancy. But, I will always love the Thai-style ground beef. It's not fancy, and I'm sure it's not authentic, but it's a great weeknight meal.

                              I have been looking for it for many years, If I had to guess it came out around 1994 and I haven't seen it since. I have all the old magazines but it takes a long time to go through them. I have checked cooking lights website but they don't go back that far. I will continue looking because it was wonderful.

                                There was a stir fried tofu and veggie recipe several years ago. I don't use tofu but I love the stir fry sauce since it contains oyster sauce.

                                Simple Seared Scallops when we can afford dry sea scallops.
