Mascarpone+strawberry+gluten free?

Hi there, I'm trying to think of a dessert to serve friends who don't eat gluten. I have a container of mascarpone and the strawberries are good right now. It would be helpful if it was bite size too...

    I just made Coeur a la Creme using mascarpone instead of cream cheese. i'd probably, as suggested above, also do some sort of strawberry balsamic preparation... might even marinate them in balsamic then roast them in the oven to let them caramelize.

      Maybe mix sweetened whipped cream with the marscapone, fold in sliced strawberries, and crumble in some meringues for a modifed Eton Mess.

        Precisely what I was going to say. I also made Strawberry Fool the other day which is not only naturally GF but fabulous! You could certainly do the same with mascarpone.

        Just made a dessert that fits your needs for my gluten-free best friend. I made a crumb crust from pecans and Rice Chex cereal crushed up in the food processor with a touch of melted butter and little sugar, pressed it in to my tart pan, spread it with the mascarpone (I had a small amt of whipping cream that needed to be used, so I sweetened that, beat it up, and then mixed it with the mascarpone and a little lemon juice, then tossed the berries on top. (I had raspberries and blueberries). It worked fine and she seemed appreciative of a dessert with a crunchy crust.

          tacosandbeer, Thank you so much for the GF crust idea! I'm going to use the nut + rice chex to replace graham crackers in a Strawberry Icebox Cake for a GF friend.

          chowser beat me to the panna cotta & mousse suggestions...you could also do a semifreddo. and i love the chocolate cup idea (or just serve in shot glasses).

          or keep it super simple, just whip the mascarpone with cream & serve with balsamic strawberries...

          my other thought was bite-size mascarpone cheesecakes - do them in a mini muffin tin, and either forgo the crust altogether or make a crust from crushed GF graham crackers (or other GF cookies), or a combination of almond meal & coconut flour.

            I'm a fan of the simplest prep for fruits in season, so I would go with the balsamic idea. mascarpone and whipped cream are heavenly.

              I like the chocolate cup idea as we always seem short on the perfect little glasses etc but the mini cheesecakes sound fun too. If I leave out the crust, do I need to use paper liners in the muffin tin or will the lil cheesecakes hold together and just pop out?

                they *should* hold together but i always use liners to be safe.

                  If you have a Trader Joes close to you they have bags of almond meal for less than $4. It made a killer gluten free crust for the cheesecake I made for Easter. Just almond meal, melted butter and a bit of sugar. People loved it.

                A mousse, budini or panna cotta. You could put them in little chocolate cups for bite sized desserts and top w/ macerated strawberries.
