Nicoise salad, and ...?
The rock band my brother manages is coming through town and I'm making them lunch tomorrow. Just because I happen to have all the right produce, I'm making a nicoise salad, subbing salmon for tuna because I'm in Seattle and that feels right. It will probably be a welcome change from the crap they eat while touring, but it doesn't seem filling enough for seven hungry guys. Besides a nice loaf or two of bread, what would be good accompaniments? Spreads for the bread? A chilled soup?
Dessert, FWIW, will be goat cheese ice cream with roasted cherries.

Not knowing anything about the band except they're 7 hungry guys, how about instead of bread serving a variety of pizzas with imaginative toppings - like tapenade; pesto dottted with grape tomatoes, and something to answer to the meat-lover's longings? If you use a prepared pizza base of some sort, it won't be labor intensive, nor too filling, and will coexist nicely with your lovely-sounding salad, and give you the freedom to chose amongst the wonderful Seattle summer (such as it is this year) bounty.
