Shanghai fried flat noodles at Joe's Shanghai
Does anyone know anything about the type of noodles they use in this dish? It's got a wonderful texture and I'd love to buy some for home use. Are they fresh or dried, and can they be purchased anywhere? I've found a few references to them on the internet as 上海粗炒面 , but as I do not read Chinese so I can't verify whether that's accurate or not.
