1) Mexican - Probably best to do a board search. Lots of info and healthy debate here. A few that get mentioned regularly are the Shed, La Choza, and El Rancho de Chimayo.
2) American - Max's is easily the best upscale New American I've had in town. For more midscale, you might check out Harry's Roadhouse or Bobcat Bite (NB no alcohol at the latter). Again tons of additional info available if you do a search.
3) Something different - Jambo Cafe for African/Caribbean, maybe La Boca for tapas, Vinaigrette for upscale, inventive, expensive, often locally-grown salads.

Jambo Cafe was really tasty. Had a Santa Fe food delivery service bring it to us at Ten Thousand Waves last year. Hopefully they are still keeping it up.

Last time we were in Santa Fe we purchased a couple of discount certificates at 999dine.com. I think that both La Choza and Vinaigrette were available at the time, among many others.

I would do La Choza for New Mexican
I would do either Restaurant Martin or 315 Restaurant & Wine Bar for American

Kenny, point of information: I believe most folks would call La Choza "_New_ Mexican". Good suggestions, tho.
