Frico/Parmesan Cups Question

I have never made these before.

I have heard that the shredded parm in the bag is easier to work with than the more expensive chunks you have to grate yourself. Does anyone have an opinion about that?

Also- if I make them the morning of an evening party, will they dry out too much? How long can I let them sit out if they are filled without getting soggy? I've seen recipes for dressed salads in them, and goat cheese mousse that looks good, but I am concerned that they are so "lacy" that fillings will leak out...Any advice?

    True 'fricos' are made with Montasio cheese, which is a lot less dry than Parmigiano Reggiano.
    The stuff that comes pre-anythinged is not the real Italian cheese. But if you use the fake stuff, you may find cooking wise it works far easier as is a moister product. Regardless it will look great and taste good as well. Should not leak, but would fill at last moment, if you want them crunchy.
