Baking with Stevia [split from the Quebec board]

can you bake with it? we're talking cakes, cookies, etc. some people won't eat splenda which is what I usual;ly use for sugar-free baking. I've heard stevia is pretty powerful like 300x sugar, so not sure how to substitute with it.

    The flavour changes when you cook or bake with Stevia. In baking, I prefer to use Xylitol (birch sugar, brand name Emerald Forest) which can be found in health food stores. It substitutes cup for cup for sugar. It's a little pricey, but low calorie and low glycemic index, so it's great for diabetic-friendly dishes.

      Just don't give too much of anything with Xylitol to a dog, it's highly toxic to them.

      As for humans, it's best to start taking xylitol slowly. If you replace sugar by xylitol too fast, it will cause 'digestion problems'.
