Gluten-free bread rx. with chew (not sourdough)

Folks, I am looking for a rx for gluten-free bread that has a bit of chew. It should not be sourdough. Just a baguette or sandwich bread shape would be useful. But it should have some chew to it.. A friend had suggested adding psyllium.

      S_K -- many thanks. I'd forgotten about using gelatin to create a "chew" situation.
