Using Kim Chee for a 4th of July Cookout

I made a big batch last week and still have a lot left over. i'm having about 12 adults and many, many children over on the 3rd. I know you can put it on hot dogs but what are some other ways to incorporate kim chee into typical barbeque fare?

    You could do a korean style burger/hot dog, like you said.

    I used:

    sliced raw garlic, dark green leaf lettuce, sliced onions (thin),

    Brush burger with a thin layer of ssamjang
    Add garlic, lettuce, onions
    Top with kimchi
    Use a thin layer of mayonnaise on the bun

        I have been on a Korean Taco kick. Make a batch of galbi for the grill, then fill your tortillas with romaine, galbi (take out the bones if you have LA cut) and kimchi. I like to add diced tomatoes sometimes and I also offer Sriracha on the side. Oh, you can also put a little bean paste on the tortillas before you put in the lettuce.

          Pork + Kimchi is one of the greatest flavor combinations known to man. I would do some pork + kimchi tacos or rolls (seaweed). Or a pulled pork kimchi sammy.. It's also good with hot dogs as you mentioned, and also makes a great "slaw" topping for burgers. I also make a kimchi chili which is excellent. You can also make some caramelized kimchi and use it in place of relish/hot dog onions on almost anything.

            You could always use it to make Kimchi fried rice or kimchi pancakes...I can eat both hot or at room temperature. But that could be because I'm a little weird. :o)

            There's also an interesting cold kimchi udon salad I've seen at a few picnics. It utilizes mentaiko (japanese spicy fish eggs). Could be worth a go...

              Ooh! what about those cold buckwheat noodles with sesame paste, lettuce, boiled egg and kimchi? that would be good!

                Do you have to incorporate it into some other dish, or can it just be available (Korean style) as a side?

                  Chop it and add it to pico de gallo for salsa
                  Add it to burgers
                  Puree and add to mayonnaise for a condiment or dressing for pasta salad
