Has anyone tried this? Is it a good/acceptable substitute for canned?

I've not used that brand, as we don't have that brand in Canada. But I've happily used the Maggi brand coconut powder for years. It is very convenient and much cheaper than cans. I say give the King Arthur brand a try.

I also don't know about the KAF brand, but buy a powdered coconut milk at the asian supermarket in town. It's really easy to use and tastes great. The one thing I don't use it for is sticky rice with mango. It just doesn't have quite the same texture.

it doesn't have the rich mouthfeel of the real thing, but is ok in a pinch

I've used the powder as a thickener, a glaze, as part of a coating recipe and in place of recipes calling for plain powdered milk.
