Ice cream to go with peaches?
I plan to make a peach cobbler or crisp for some dinner guests this weekend. I would also like to make a homemade ice cream to go with it. Does anyone have a unique suggestion? I would like to have something more interesting than vanilla. Thanks!

that was the first thing that came to my mind. you don't want to stray too far from vanilla, imo, with any fruit dessert, but ginger should be just right to contrast against the sweetness of the crisp. However, if your peaches are tart at all, and the pie not a very sugary one...then I might go with caramel. hmmm...or ginger/caramel...
I have specifically avoided buying an ice cream maker because I see what kind of trouble it could lead to. ;-)

I made coconut milk/ginger ice cream last weekend and added finely chopped crystalized ginger with no problem. I added fresh ginger to sugar and water to make a simple syrup, then left the ginger in the bowl when I added the coconut milk to further infuse the flavor (would have done the same with cream in a dairy version), strained before chilling. Great with fresh peaches!
