ISO Restaurant near York University/Rexall Centre for early dinner Saturday night before Diana Krall/Tony Bennett
One sort of vegetarian (he doesn't obsess about the possible presence of fish or chicken stock in something and eats a bit of chicken) and one carnivore......both like lots of flavour/would like to avoid chain restaurants if possible.....any suggestions?
That area is a pretty big food desert unless you are willing to drive a bit more east or north. The closest thing in the area that might be suitable is Thai Bamboo on Steeles (just east of Keele). Good portion, inexpensive, and pretty good.

There's a passable Japanese restaurant of the won't kill you, won't impress you sushi variety just East of Keele on the South Side of Steeles. Gengi? Something like that. It's in one of the little strip mall plazas.
La Risata used to be a fairly decent Italian place, but I haven't been there in a number of years, so I couldn't say what it's like now, and they've been doing coupon sites lately which might suggest problems.
Other than that, most of the places I frequented in that area were pretty downmarket -- places for Pho, Shawarma, and the like, rather than sit down restaurants. I can tell you about the ones I liked if that's the sort of thing you're interested in, but they're not really what I'd think of as 'night out' kind of places.

If you don't mind going up to hwy#7 and Weston rd then you could go to Mastro Roberto Trattoria 7887 Weston Rd, good higher end italian with good service too. Next door in the same plaza is Metro pizza (I think that's what it's called) own by the same people but little more casual.

Not to be mean, but I really really hated my experience at Mastro Roberto's and don't recommend it for anyone. My seafood pasta tasted extra fishy and the tbone that my husband ordered was well done (even though it was ordered rare), and super thin. He told the waiter that it was over cooked, and the waiter just shrugged and said that that's how it was cooked!
In any case, I know that this doesn't help the OP, but if they are willing to go up to Woodbridge, their options open up a little bit. I think Paganelli's on Hwy7 near Martin Grove might be what they are looking for, and should have a vegetarian option, as they have risotti.
