Curry expiration question
I found a recipe* in Real Simple for curried yogurt dip and just made a small test batch. In the picture it's mustardy-yellow and mine is rust-colored. Is that because my curry powder is past its prime or because there are different, more yellow varieties of curry . I can't remember when I purchased my curry powder - which can't be a good sign - but probably 6+ years ago. It tastes fine, but it doesn't have the pop of the dip in the photo.
* For anyone who's interested.. mix 1-1/2 cups plain Greek yogurt; 1 tablespoon each of curry powder and lime juice; season w/salt and pepper and chill. Serve w/sweet potato chips.
Curry powder is a mixture of different spices, and depending on your purveyor will contain many different things in different quantities.
So the fact that your curry powder *looks* different than the one pictured is no surprise.
Take a look at these pictures of curry powder .. http://goo.gl/4w3Kp ... notice the variations and gradations in color?
