I know this is late but a suggestion for future seekers. Do brunch at Chef John Fleer's new resturant Cayon Kitchen @ Lonesome Valley, which is in Sapphire. Beautiful setting! We were there the same weekend as you and had dinner there on Friday. Chef Fleer was so gracious he even signed our menu's and talked with us a bit. You won't be dissapointed!
The 2 breakfest we did have were dissapointing everyones eggs benidict were overcooked, may as well have been hard boiled.
Unfortunately there aren't a whole lot of options. Zeke & Earl's serves breakfast, as does Bella's. I remember Bella's being very good, but I've never had breakfast at Zeke & Earl's so I don't know how good it is.
Here's a tip: Stop by the Ingles supermarket early in the morning and get some apple fritters from the bakery. Yes, it's a supermarket bakery, but those things are amazing.
