The flap meat is key - nothing makes juicier or more tender, flavorful kebabs. I usually triple the garlic and add a squeeze of lemon juice to the marinade as well.

I love the taste of bacon wrapped chix chunks after getting em at Fanual Hall Boston. The combo ofsmokey bacon really adds a lot. I love kabobs too and been wanting to do a southern crab boil kabob that saw recently...threading, sausage, shrimp, corn, potatoes w/ those crab boil seasonings or old bay.

this Alton Brown recipe is simple and super-flavorful...but not the least bit spicy as the title indicates, so if you like heat, add fresh or dried chile to it (i use dried Aleppo pepper):

Rub chicken pieces with tandoori paste and then skewer with chunks of onions.
Marinade chicken or lamb in dijon, olive oil, lots of chopped garlic, lemon juice, chopped mint, and fresh black pepper and salt. Skewer with mushrooms and pearl onions.
Beef marinaded in olive oil, garlic, oregano, cumin powder, lemon juice and chili powder. Skewer with onion and bell pepper chunks.
Beef or chicken marinated in soy sauce, vegetable oil, grated fresh ginger, a dash of sesame oil and pepper. Skewer with green onion pieces, mushrooms, bell peppers. -

And for other kabob recipes, I like to slice spicy smoke sausages and skewer them within the loop of a shrimp, then give it all a glaze with smoked paprika, cayenne, brown sugar, vinegar and some garlic oil.

I've never cooked beef as a kebab and I suspect "recipe" is far too grand a word for what I do with lamb - but it gets cut into good bite sized chunks ( at least 3cm cubes), marinated in oil, lemon, garlic, onion, bay & thyme, goes on skewers and then onto the BBQ (or, more likely with the weather we have, under the grill). Of course, that's when I'm being fancy - usually I skip the marinade.
