Pickled okra in vacuum-sealed bags?

I have a friend who's deployed in Afghanistan and he's craving pickled okra. We can't ship these in glass jars. We have access to a vacuum sealer and are wondering if we could pack the raw okra, garlic, chiles and brine, vac-seal the bags and then hot-water process the bags. They don't have access to fridges, so we want to make snack size servings. Any idea if this would work? Thanks for any help.

    I do realize that we have to confirm that the vacuum sealer will handle liquids for this to even be considered.
