Flank steak

How do you make yours? Had some at Texas de Brazil that was the bomb!

      I've got one marinating as I write. Will grill it to med. rare and enjoy with smashed potatoes (cream cheese, sour cream, butter, chives) and rapini sauted with pancetta.

        Not an expert on flank steak but that's my favorite smashed potatoes recipe.

          I got a big bag of small, multi-color taters at Costco and this was the last of them. OMG, so delish. Oh, did I forget to mention half and half? Oops.

        Flank Steak Dervish
        All-Time Best Marinade!! A favorite from when I was growing up.

        Trim all the fat from a 2 to 2½-inch flank steak and score it against the grain on both sides with a sharp knife.

        Place in a shallow ovenproof pan & pour over it a mixture of:

        ½ cup soy sauce
        2½ Tb brown sugar
        2 Tb lemon juice
        1 Tb ground ginger and
        ½ t. garlic salt

        Chill in marinade overnight, turning in the morning. Drain and broil 3 to 4 inches from the flame, five minutes each side for rare beef. Carve diagonally across the grain into thin slices.

        Can also be grilled, of course. Even better.

          Marinate overnight in olive oil, soy sauce, rosemary, and garlic. Grill 7 minutes per side. Let rest 10 minutes, slice thin on the bias. This has been my favorite way to cook flank steak for 30 years.

            that would be at least a med. well done flank. Last night, I grilled min 4 then 4 min per side and it was med. rare ish. Resting needs only 5 min. It's a thin steak and cools quickly. 10 min is a bit much.
            for me anyways.

              These are huge steaks -- 2# plus, so they come out medium rare.

                That is a big flank- like london broil weight.
