The recent homemade mayo thread (and it's links) got me to thinking about making my own homemade mayo. Any advice on how long it will keep in the fridge?
I often keep it about 5 days. I'm sure there is a rule somewhere but 5 days just seemed about right so that is what I do. Not been any issues with quality or illness.
Since you're dealing with uncooked egg, I wouldn't keep it around more than a couple of days. In general, I only make what I need for the meal I'm having, then just toss out the rest.
